WHITE BEAN CHILI

Try this if you like spicy. This is an original recipe created to give a variety of chili for an office gathering.
INGREDIENTS:
3 Pounds boneless pork ribs cut into 1 inch cubes
2 large onions sliced or diced
2 pounds dry white beans(pinto,great northern or navy)
6 medium Jalepenos sliced into rounds
3 Jabeneros (Scotch Bonnets) sliced into rounds
1 quart chicken stock
1/3 cup dry Tones Chipolte seasoning
1/4 cup dry Tones Chicken gravy mix
1 tablespoon season salt Lawry's
1 tablespoon red pepper falkes
PROCESS:
Soak beans in volume ratio of 4-1 water over night or use pressure cooker for 1 hour
In large pot brown pork and onion
Add all other ingredients except dry chicken gravy and 1 cup of chicken stock
Add cooked beans and simmer for 1/2 hour
Mix 1/3 cup dry chicken into 1 cup of chicken stock thouroughly to avoid lumps and pour into simmering mixture
Bring back to simmer and serve
Goes very well over rice. Top with chopped green onion, cheddar cheese, sour cream or whatever.
