SWEDISH PANCAKES

This recipe is from Anders' grandmother Selma Blix Anderson. It is a Myhran family favorite. Everyone shows up for breakfast when Swedish Pancakes are on the menu.

INGREDIENTS:
2 EGGS SEPERATE YOLKS AND WHITES
2 TABLE SPOON SUGAR
1 QUART BUTTERMILK
2 TEASPOONS BAKING SODA
2 TABLESPOON SHORTENING MELTED
2 TEASPOON SALT
2 CUPS ALL PURPOSE FLOUR



PROCESS:
Beat egg white until fluffy and set aside
Combine egg yolks and melted shortening and beat well
Add sugar, salt, buttermilk and flour and mix gently
Gently fold beaten egg white into mixture add baking soda while folding
Fry on a griddle or fry pan. Add small amout of shortening to surface to prevent sticking. Serve plain or with favorite topping
