GERMAN POTATO SALAD

INGREDIENTS:

1 POUND OF BACON DICED
2 LARGE ONIONS SLICED
1 1/2 TABLESPOON FLOUR
1/2 CUP WHITE VINEGAR
3 TABLESPOON SUGAR
1/2 CUP WATER
1/8 TEASPOON PEPPER
SALT
8 CUPS DICED OR SLICED MEDIUM BOILED POTATOES


PROCESS: Fry bacon to just shy of the crisp stage,remove from pan and set aside
Saute onions in bacon grease until medium brown and remove from pan,set aside
Add flour to pan and stir into pan drippings
Add vinegar,sugar, water saly and pepper and cook for 5 minutes to blend the flour in
Add back in the bacon and onion and mix well
Add prepared potatoes by folding them in gently.
Warm over low heat.

Better the second day and may be served warm,hot or cold
