CHICKEN AND DUMPLING FRED ELAM STYLE

Uncle Fred Elam(Bernice Chmura) told us about some of the dishes his mother would make. He introduced us to mustard greens, black eyed peas,hominy,smoked ham hocks, roasted chestnuts, and his favorite chicken & dumplings.


INFREDIENTS:
2 POUNDS BONELESS CHICKEN THIGH CUT INTO 1 INCH CUBES
1 LARGE ONION DICED
2CUPS CHICKEN SOUP STOCK
4 CUPS BLACK EYED PEAS (CANNED IS GOOD)
2 CUPS MUSHROOMS SLICED
1 TABLESPOON DRY MUSTARD
2 TABLESPOON BUTTER
1/4 CUP WHITE WORCHESTERSHIRE
4 CUPS BISQUICK FLOUR
1 1/3 CUPS OF MILK
PAPRIKA

PROCESS:
Use a large ducth iven to brown chicken and onion in butter
Add mushrooms, blackeyed peas(unstrained),dry mustard, chicken stock and let simmer for 15-25 minutes
In a seperate bowl mix bisquick flour and milk to make dumpling mixturer
Add worchestershire to simmering pot
Using a large spoon drop dumpling mixture covering entire area cover and continue to simmer for 10-15 minutes
Sprinkle paprika over top
Spoon into soup style bowl and enjoy
