WHITE BEAN CHILI

Caribbean Jerk spin to a typical chili recipe. This is an original recipe created to give a variety of chili for an office gathering.
INGREDIENTS:
3 Pounds boneless pork ribs cut into 1 inch cubes
2 large onions sliced or diced
3-4 garlic cloves sliced
2 pounds dry black beans
6 medium Jalepenos sliced into rounds
3 Jabeneros (Scotch Bonnets) sliced into rounds
1 quart beef stock
1 Tablespoon ground allspice
3/4 Tablespoon ground Cinnamon
1 tablespoon season salt Lawry's
3.4 Tablespoon ground thyme
1/2 cup dark rum
1 tablespoon gound nutmeg
PROCESS:
Soak beans in volume ratio of 4-1 water over night or use pressure cooker for 1 hour
In large pot brown pork and onion
Add all other ingredients except dry beef gravy and 1 cup of beef stock
Add cooked beans and simmer for 1/2 hour
Mix 1/3 cup dry beef into 1 cup of beef stock thouroughly to avoid lumps and pour into simmering mixture
Bring back to simmer and serve
Goes very well over rice. Top with chopped green onion, sour cream or whatever.
